Ingredients
- The Hero: 250g Fresh Local Shiitake Mushrooms and/or Royal Trumpets (stems removed, caps sliced or kept whole if small).
- The Umami Marinade:
- 3 tbsp Butter (melted)
- 1 tbsp White Miso Paste
- 1 tbsp Soy Sauce
- 4 cloves Garlic (finely minced)
- ½ tbsp Rice Vinegar (adds a necessary brightness)
- A crack of Black Pepper
Method
- Whisk the Base: In a medium bowl, whisk together the melted butter, miso, soy sauce, garlic, rice vinegar, and pepper until the miso is completely smooth.
- The Marination: Toss the mushrooms into a bowl and mix gently until every mushroom is well-coated. Let them sit for 10–15 minutes—this allows the salt in the miso to draw out just enough moisture to create a glaze.
- The Sizzle: Heat a cast-iron skillet or non-stick pan over medium-high heat. Add the mushrooms (and all the extra marinade).
- Golden & Crispy: Spread them out and let them sear undisturbed for 3–4 minutes per side. Cook for a total of 12–15 minutes, tossing occasionally, until they are deeply caramelized and slightly crispy on the edges.
